PRAWNS PICKLE- KERALA STYLE NADAN PRAWNS ACHAR

 


Pickles are mouth watering delicacies to which nobody can ever say a ‘no’. They being an innate part of Indian cuisines are prepared in several different ways, but, today I would like to share with you all the magician’s code of preparing the mouth smacking “PRAWNS PICKLE”. I know you are all wondering about this magician. As typical as it is, my mother is the magician with magic in her hands and love in her heart. Sounds cliché? Yeah I know, nevertheless that is the truth. She prepares a variety of pickles but this is my all time favourite.

Okay, now back to business!

Here I am presenting to you the simplest way to prepare this tasty snack. I hope you all like it.


     
INGREDIENTS

PRAWNS                                          ½ kg

KASHMIRI CHILLY POWDER       6 tbsp

TURMERIC POWDER                     ½ tsp

SALT TO TASTE

GARAM MASALA                          ½ tsp

GINGER GARLIC PASTE               2 tbsp

FENUGREEK POWDER                 1 tsp

SLICED GINGER                             3 tbsp

SLICED GARLIC                             3 tbsp

SLICED GREENCHILLY               6nos.                          

CURRY LEAVES                             few

MUSTARD SEEDS                          1 tsp

SESAME OIL                                    1 ½  cup

VINEGAR                                         5 tbsp


TOTAL TIME: 1 HOUR
INSTRUCTIONS
·       Peel and de-vein the prawns (DO NOT FORGET THE DE-VEINING PART!), wash it thoroughly and drain the excess water using the strainer.

·       Add 3 tbsp Kashmiri chilli powder, ½ tsp turmeric powder, 2 tbsp ginger garlic paste, 2tbsp vinegar, ½ tsp garam masala powder, salt to the cleaned prawns and mix well. Let it marinate in the refrigerator for 30 minutes.

·       Heat 1 ½ cup of oil in a pan, to this add the marinated prawns and fry on low flame until cooked. After the prawns are fried and are of brown colour move them into another dish.

·       To the remaining oil in the pan, splutter mustard seeds and add ginger, garlic and green chilly that are sliced, and curry leaves. Sauté this until this turns to a light brown colour.

·       To this add 1 tsp fenugreek powder, 3 tbsp chilli powder, 3 tbsp vinegar and salt to taste, let it boil for few minutes.

·       To this add the fried prawns and mix well, so that flavour are absorbed in. Let it cook for five minutes.

·       Turn off the flame and allow it cool, transfer it to a bowl or a jar as you wish, provided it is clean and dry.

·        Now the tasty, mouth watering Prawns pickle is ready to serve, savour it’s flavour and enjoy the dish.
